Ingredients:
2 large eggplants, 200 g. ham, 1 packet of sliced cheese, 2 eggs, bread crumbs, salt and pepper.
Preparation:
Rinse the eggplants, cut them into slices 5-centimetres-thick and place them in a bowl. Pour some salt and wait for the water to drain.
Then squeeze them being careful not to break them.
Form sandwiches, placing between two slices of eggplants a slice of ham and a slice of cheese. Them dip each sandwich in the beaten eggs with some salt and breadcrumbs. Fry in hot oil to brown. Serve warm or cold.
