A recipe a day… fettuccine with peas and ham

Ingredients for 4 people:

 

320 g. fettuccine; 150 g. ham (just one slice); 1 white onion; 70 g. frozen peas; 40 g. grated pecorino; 1 teaspoon of brandy; 40 ml. extra-virgin oil; pepper in grains; salt.

 

Preparation:

Eliminate fat and cut the ham into sticks. Peel the onion and cut it. In a large fry pan, heat the oil and fry the ham for two minutes over low heat, add the brandy and let evaporate, then remove it with a perforated spoon and in the same pan brown the onion for one minute and fry the peas with two spoons of hot water.

 

Season the peas with salt and pepper and cook for 5 minutes, then add the ham and the onion, continue cooking for another 3 minutes mixing with a wooden spoon.

Cook and drain the fettuccine, pour them into the fry pan and cook for one minute, sprinkle with pecorino, pepper and serve. If you like, add parsley.
